2017 Miami Cochon555Sunday, March 26, 4pm-7:30pm – Ritz Carlton South Beach, 1 Lincoln Rd, Miami Beach

Cochon555 Tour returned to Miami with its Heritage BBQ edition at The Ritz-Carlton, South Beach, promoting the global grilling traditions and local family farming. From winemakers and distillers to barkeeps and chefs, dozens of local biggest hospitality talents were cooking and mixing – Old World barbecue recipes cooked over live fires. A portion of all proceeds will go to Cochon555’s sister charity, Piggy Bank – a pig farming sanctuary.

The chefs are each given one whole, heritage-breed pig of 200 pounds and one week to prepare the whole animal. Each chef presented a “Judge’s Plate” of six dishes to a panel of 20 notable judges. The panel scored each plate based on utilization; global influences; cooking techniques; and overall flavor in order to select a winner, who will then be crowned the “BBQ Prince/Princess” of Miami. The competing chefs for 2017 Miami Cochon555 were:

Chef Clark Bowen and Chef Rick Mace of db Bistro Moderne & Café Boulud Palm Beach
Chef Tito Vargas of The Bazaar by José Andrés
Chef Jeremiah Bullfrog of gastroPod
Chef John Gallo and Rene Reyes of Pinch Kitchen

Williams-Sonoma sponsored an amazing Pop-Up Butcher Shop that raised money for charity with the help of Billy Harris, a Local Butcher. Each year Creminelli stuns with its all-natural, slow-cured salami, La Brea Bakery offers their delicious artisan bread, and Les Trois Petits Cochons features delicious, authentic and quality pâté and charcuterie. The Perfect Puree of Napa Valley sponsored a delicious and perfectly blended purees featured in Tiki Bar and spotlight dessert bar by Pubbelly Restaurant Group. Breckenridge Distillery once again featured spirits for Smoked Old-Fashion, and the Tiki Bar. The House of Angostura, he Trinidad and Tobago company famous for their production of Angostura bitters, also featured rum for the Tiki Bar, and Heritage Rum Cart. Guest could refresh with palate pleasing non-alcoholic sodas from DRY Sparkling.
